I skipped last week’s WIAW since we were in the thick of moving from Charlotte to Asheville (still feels weird typing that) but I’m back today! Sharing my snacks and meals in hopes it will give you some ideas and I’m also sharing my favorite taco bowl recipe. This is something we legit make every. single. week. and never get tired of it. I know it’s a simple recipe, but I think I’ve found the best combination of sauce toppings…it’s so dang good.
Breakfast & Coffee #1: First thing I will have a cup of coffee. Lately I mix in half a scoop of this collagen powder into the coffee. Then, I mix about 3/4 cup of unsweetened vanilla almond milk with just a splash of Natural Bliss vanilla creamer in a measuring cup. Pop that into the microwave for 1 minute to steam the milk, then froth it with this handheld frother. Pour over coffee!
My breakfast was Bob’s Red Mill rolled oats (I mix with water and cook in the microwave) and stirred in some peanut butter and topped with sliced banana.
Morning snack: 2nd cup of coffee + Chocolate Chip Cookie Dough BUILT bar. I love these bars. Each flavor is a little different in terms of nutrition stats if you care, but per bar they are roughly 150 calories, 17g of protein, & taste like a candy bar. Lunch: Mixed greens + spinach + sprouts + air-fried chicken nuggets + green goddess dressing
Dessert after lunch: OCHO coconut chocolate bite
Afternoon snack: Two Good Vanilla yogurt w/ some honey on top. I love this yogurt!

Dinner: My Favorite Taco Bowl Recipe
Ingredients:
- 1 package ground turkey
- 1 packet taco seasoning
- 1 green bell pepper
- 1 packet brown rice (I use the Uncle Ben’s steam in the bag kind bc it’s just easier)
- 1 can black beans
- guacamole
- Bolthouse Farms Cilantro Avocado dressing
- Good Foods Queso Style Dip – this is a vegan queso, you could use real queso if you want but this is made from cauliflower & red pepper and some other things so a little “healthier”
- Cholula’s Chipotle Hot Sauce – this is not very spicy, just has a really great smokey chipotle flavor!
Directions:
- Dice green pepper
- Cook ground turkey and taco seasoning (according to package directions) and add green pepper so it cooks with it
- I usually just microwave the brown rice and the black beans separately to heat (drain beans first)
To serve: Layer brown rice, black beans, taco turkey & green peppers, then on top of that I like to do a spoonful of guacamole, heavy helping of the chipotle hot sauce, drizzle of cilantro avocado dressing, and another spoonful of the queso style dip. OMG Y’ALL. The sauce combo is out. of. this. world. I am obsessed. Give it a try and let me know if you like it as much as me!
Another note, sometimes I prefer a taco salad, in which case I will swap out the brown rice and either do romaine or a mixed green mixture! Or sometimes I get crazy and combine it all!
Dessert: Coconut Dark Chocolate Bark Thins! Sooooo good.
