One thing I’ve been trying to be better about is trying new dinner recipes so I’m not constantly making the same thing over and over. For me, I need them to be pretty easy, pretty healthy, and pretty quick. 3 Healthy Dinner Recipes
Crispy Smokehouse Chicken + Roasted Sweet Potatoes
Ingredients:
- 2 chicken breasts
- McCormick’s Grill Mates Smokehouse Maple Seasoning
- Sweet potatoes (we bought the pre-diced kind)
- Panko/bread crumbs
Directions:
- Preheat oven to 425 degrees.
- Pat chicken dry with paper towels, smooth a thin layer of sour cream on top of each, then add your smokehouse seasoning + panko breadcrumbs (I just did a tiny bit for some crunch)+ salt & pepper
- Prepare one baking sheet with drizzle of olive oil, then add sweet potatoes evenly. Top with smokehouse maple seasoning + salt & pepper then bake for 40 minutes on the top rack.
- Prepare another baking sheet with light layer of olive oil and place chicken on the sheet. After sweet potatoes have been cooking for 20 minutes, put the chicken in the oven on the middle rack to bake for 15-20 minutes. I always check chicken’s internal temperature to be sure it’s at least 165 degrees!
Lemon Parmesan Shrimp + Broccoli & Cauliflower Bake
Ingredients:
- 1 lb peeled & deveined shrimp
- minced garlic
- 2 tablespoons finely chopped shallot (we skipped this)
- Italian seasoning
- 6 cups cauliflower
- 6 cups broccoli
- Grated parmesan cheese
- fresh chopped parsley
- 2 lemons
This recipe is actually from a cookbook that I have, called SkinnyTaste One & Done: 140 No-Fuss Dinners for your Instant Pot, Slow Cooker, Air Fryer, Sheet Pan, Skillet, Dutch Oven. This entire cookbook checks off all of the above points for me: easy/healthy/quick so I def recommend it. I’m trying to try out a new recipe in there every week or two! Wasabi Zinger Salmon Bowls + Jasmine Rice & Green Beans
This recipe was actually from an old HelloFresh box we got a couple years ago! We really liked the recipe so I love that you can always keep those recipe cards. Instead of cooking Jasmine Rice the old fashioned way I just get the microwave kind- so much faster although not necessarily cheaper (worth a couple extra dollars IMO).
Ingredients:
- 2 bags of Jasmine Ready Rice
- 1 bag of steamable green beans
- 1lb salmon (we get wild caught)
- 1 lime
- Sour cream
- Wasabi paste
Directions:
- Cut lime into wedges
- Make the Wasabi Crema (the sauce on top of the salmon):
- Stir together 2 spoonfuls sour cream + juice from half the lime + wasabi (start with just a touch then add more in to your taste preference as it is spicy!) + salt & pepper. You can really make this sauce how you like it so if you want more sour cream, use more of that, or more lime juice or wasabi etc.!
- Cook the salmon:
- Heat a large drizzle of oil in a large pan over medium-high heat. Pat salmon dry with paper towels and season all over with salt and pepper. Add to pan skin sides down. Cook until skin is crisp and flesh is almost cooked, 5-7 minutes. Flip and cook on the other side to desired doneness, 1-2 minutes more.
- While salmon is cooking, I microwave the rice and green beans
- Finish & serve: Put rice & green beans in a bowl and season with salt and pepper. Arrange salmon on top of rice, then add the wasabi crema on top of that. Serve with any remaining lime wedges on the side.
