Alright I realize it’s Thursday and I’m just now doing the weekend recap from last weekend, but that’s what happens when Monday is July 4th and you procrastinate and everything gets pushed back.
I kicked off the weekend with a circuit workout.

Last Friday was the two year dating anniversary for Craig and me. It also marked the 99 day countdown til we get married. We are now at 93 days, but who’s counting? Oh right, I am. Is it October 8th yet?
To celebrate we just wanted a nice dinner outside in the beautiful weather, so we went to 300 East and sat on the patio, ordered chips & guac and some fish tacos, as well as drinks! Peach sangria for me and a Manhattan for him. Ain’t he cute?? 😉




Followed up with froyo for dessert. Are you a fruity froyo topping person or a chocolatey one? Or both? I definitely go for all the chocolate. My toppings usually include heath bar, chocolate chips, white chocolate chips, chocolate syrup, etc.

The next morning we went out to Crowder’s Mountain to get a hike in before it got too hot. We didn’t really beat the heat at all since we were a sweaty mess when we got to the top, but we did miss a lot of the later day crowds so that part was nice. Drove back to Charlotte with the top off the Jeep and it was pure joy.

That evening we went over to Sycamore Brewery to hang with some friends and I had to have one of the prosecco pops. I mean…a frozen popsicle in a glass of bubbly? Yes please, especially when it’s 100 degrees outside.

Sunday I woke up and had some coffee and my standard pre-run breakfast…a piece of gluten free toast with peanut butter, sliced banana, and honey. I then ran 4 very hot miles (that’s what you get when you decide to sleep in and not get dressed and out the door til 10:30am-already scorching here by that time!) then back home, where I spent the majority of the rest of the day crushing ice cold water and reading while sunbathing on the patio!

Dinner that night was ground turkey with taco seasoning, black beans, and brussels sprouts.

The next day was Independence Day and we had some friends over to hang at our place and play yard games. I started my day with weights and a circuit workout, followed by this festive and patriotic protein pancake! Had to!

My girl Emily brought over these chex bars and I ate about 10. Washed them down with rose sangria because AMERICA 🙂 haha!




That’s a quick recap of our fun long weekend…looking forward to tomorrow being Friday and another fun weekend ahead. I just wish it was a 3-day weekend again!! (And always!!)
